One Pan Sausage & Veggies


For those of you who know me really well, y’all know I’m not a fan of cooking...my husband is the one who usually cooks. My idea of dinner is going out or 1-800-takeout!

In an attempt to change our eating habits (eliminating gluten and dairy and limiting sugar) and to try cook more, I started with this easy and delicious sausage and veggie dinner last night.

Our kiddos love veggies (my little boys favorite is broccoli and little girl loves tomatoes and squash) and I love smoked turkey sausage, so why not put them together, right? I found this recipe from Chelsea's Messy Apron, but changed it up a little.

This dish truly was quick and easy to make and the best part is you can make it different ways every time. I first prepped all the veggies and tossed in a large mixing bowl. I then cut up the turkey sausage and added that to the mixing bowl. Next, I mixed everything together and poured onto the baking sheet. In a separate mixing bowl, I mixed the olive oil mixture and poured all over the sausage and veggies.

One Pan Sausage & Veggies Recipe

Servings: 6-8

Prep Time: 10-15 minutes

Cook Time: 35 minutes

Ingredients:

  • 3 large carrots

  • 4 small red potatoes

  • 2 yellow squash

  • 2 red peppers

  • 1/2 head of broccoli

  • 1 pack of Smoked Turkey Sausage

Spices (mix together in a separate mixing bowl):

  • 1 Tablespoon EACH: dried basil, dried oregano, dried parsley, garlic powder

  • 1 teaspoon dried thyme

  • 1/2 teaspoon red pepper flakes (optional and you can add more for extra spice)

  • 5 Tablespoons olive oil

  • Salt and pepper (optional). I used two pinches of salt and 1 teaspoon of pepper

Instructions:

  1. Preheat the oven to 400 degrees F. Line a large sheet pan with foil (easy clean-up).

  2. Prep veggies and put all the veggies in a mixing bowl after cutting.

  3. Wash, peel and chop the carrots. Wash and (if desired peel, we love the peel on) chop the red potatoes. You want the pieces smaller (I cut the potatoes in three and then chopped in half and then chopped in half again).

  4. Cut the squash into thick slices and then cut in half. Coarsely chop the broccoli and remove some of the broccoli stem. Wash, remove the stem and seeds from the peppers and chop into medium-sized pieces.

  5. Chop the sausage into thick slices and chop in half and add to the veggie mixing bowl.

  6. Pour all the veggies and sausage on the sheet pan.

  7. In a small mixing bowl, combine all of the spices (and salt and pepper if desired) with the olive oil. Stir to combine.

  8. Pour the spices & oil mixture on top of the sausage and veggies.

  9. Place in the oven for 15 minutes. Remove and stir the sausage and veggies. Return to the oven for another 20 minutes or until veggies are crisp and tender (the potatoes were the last veggies to be tender).

  10. Serve on top of rice or quinoa if desired.
